About us

Smoke is a schedule, not a flavor

Who we are, how we work and why this smokehouse is set up the way it is.

How we got here

Stage 1

Trim

Afternoon knife work: brisket trimmed, ribs peeled, links stuffed.

Stage 2

Fire

Pits lit at nine, oak only, and tended through the night.

Stage 3

Rest

Meat rests wrapped until it is ready to slice, never rushed.

Stage 4

Serve

Sliced to order at the counter from noon until the board is honest.

Smoke is a schedule, not a flavor

Barbecue is what happens when good meat meets low fire and nobody hurries either. The pits are lit at nine at night, the brisket comes off when it is ready rather than when the clock says, and the counter opens at noon with whatever the fire did well.

When the board says sold out, it means the pit is empty, not that we are keeping some back. Come earlier tomorrow.

What matters to us

  • Sold out is honest
  • Fire before flavoring
  • Respect the animal
  • Feed people properly
